Creamy Mushroom & Chicken Risotto

This is a delicious meal that the whole family can enjoy! When I started cooking I used to shy away from making risotto because it always looked so complicated when I watched cooking shows, however once I discovered this simple recipe I love making risotto.


What you need:

1 cup risotto rice (it's a little different to regular white rice)

A handful of mushrooms of choice (portobello is what I used)

1 tbsp butter

1 shallot onion diced

2 cloves garlic minced

2 chicken breasts cut into small cubes

Chicken broth

Pinot Grigio wine (optional)

1 tbsp Italian seasoning

1 tbsp paprika

Mozzarella cheese

Salt and pepper to taste


In a medium sized bowl, mix 1 cup boiled water with 1 and half cups of chicken broth. Add 1/2 cup white wine (optional) and leave to sit for 5 mins on a low heat.

In a non stick pan, fry up your chicken breasts, add Italian seasoning, salt, pepper and paprika. Once chicken is browned set aside.

In a deep dish pan, add your butter and once it melts, add the shallot onion & the minced garlic until soft. Add the mushrooms, sliced and once they are soft add your risotto rice. Once the rice has been coated by the butter, use a cup to add 1 cup of the mixed liquid to the rice. Keep stirring until the liquid has been absorbed, and continue to do this until the rice is soft. This usually takes 20 to 30 minutes.

Once the rice is soft, add your mozzarella cheese and the last bit of liquid and stir on low heat.

Serve. Enjoy!!
