Traditional comfort food

Thanks for stopping by. Today I am going to share a recipe with you. If you are from East or Southern Africa then you know we love our Sadza nenyama aka (nshima,pap, ugali). It is a corn meal paste that you eat with veggies and meat of choice. In this specific recipe I made a grilled tilapia and here is how you too can make this type of meal and just please your belly!!!

For the fish marinade you will need:

1 tbsp ginger powder

1tbsp cooking oil

1 tsp garlic

2 tbsp lemon juice

1/2 tsp brown sugar

Salt & pepper

Fresh Basil

Blend all these ingredients together then lather onto your fish. Store in fridge for 1 hour.

Wrap fish in foil paper then put in the oven at 375°F for 25 mins.

Remove foil & put on broil for 3 mins to get it a little crispy.

For pap: you need 1/2 cup corn meal and stir in a pot with cold water. Add 3 cups previously boiled water and stir until it starts bubbling. Reduce heat and leave to simmer for 10mins. Come back and slowly add more corn meal as you mix the corn meal vigorously in an 8 figure motion until desired consistency is established. Cover with lid and leave to sit with stove off for 2 mins.

For greens: I used cabbage here. In a pan heat up 1 tbsp cooking oil, & 1/4 cup water. Add finely chopped cabbage, cover with a lid and leave for 2 mins until it starts shrinking. Stir the cabbage and add salt to taste.

I swear to you this meal just hits the spot! It's definitely not an eat everyday type of meal because trust me girrrll you will get the itis immediately after consuming.
